Creamy Zucchini & Sausage Soup (Whole 30 Approved)

I love the creaminess of the soup & the hint of spice from the sausage. It’s like they were meant for each other. Plus it is dairy free, gluten free, Paleo & Whole 30 compliant! Simple to make, and delicious! Tastes even better the next day.

Ingredients
  1. 4 Large Organic Zucchini
  2. 1 Medium Onion (diced)
  3. 3 cloves garlic (pressed)
  4. 2 Tbsp refined coconut oil
  5. 1 1/2 tsp sea salt (divided)
  6. 3 cups chicken stock
  7. 1 can full fat coconut milk
  8. 1 lb of sausage (nitrate, nitrite & sugar free)
Instructions
  1. First, do yourself a favor and invest in a spiral slicer or at the very least a julienne peeler. Great for making zucchini noodles, or "zoodles"!
  2. Then peel all of the zucchini into a mirowave safe dish. Sprinkle with 1/2 tsp sea salt & cover
  3. Place in the microwave for 10 mins.
  4. While thats steaming, put coconut oil, diced onion & garlic (I prefer to use a garlic press, because it's awesome.) Into stock pot. Cook until onion is translucent snd the garlic is fragrant. (Try not to burn)
  5. While that's going on, remove the Zucchini and put into blender with at least a cup of the chicken broth. More if it fits. (May also do in stages) The goal being to puree the zucchini.
  6. When completed, pour into stock pot. Add remaining 1 tsp of sea salt & simmer while you are preparing the sausage.
  7. Put the ground sausage into pan and heat until cooked through.
  8. Once fully cooked, add to pot along with the can of full fat coconut milk. Stir until well blended. Turn up heat to medium. Let the flavors meld for 3-5 minutes.
Notes
  1. **The longer, the better the flavor. Soup tastes even better the second day. **
