Tomato Basil “Cream” Sauce with Shrimp & Asparagus

One night I was in the mood for a tomato basil cream sauce, but since we went paleo and dairy free, I needed to find a replacement. After coming up empty-handed in my search, I decided to create one. And then my Tomato Basil “Cream” Sauce was born. 

*WAIT* Before you start you need to place 1 can of full fat coconut milk in the fridge for at least two hours, three is best and overnight is guaranteed. If you are in a rush, you can put it in the freezer for at least an hour.

Ingredients
  1. 2 tbsp of Olive Oils
  2. 1 Bunch of Asparagus chopped into 1 inch sections
  3. 4 shallots or 1 small diced onion
  4. 2 clove of garlic
  5. 1 can of petite fire roasted tomatoes (do not drain)
  6. 1/4 tsp oregano
  7. 1 Drop of Basil Essential Oil or 1 tbsp dried Basil
  8. 1 1/2 tsp sea salt (divided)
  9. 1/8 black pepper
  10. 1 lb. of cooked shrimp
  11. 1 cup of canned coconut milk
Instructions
  1. Put the olive oil in your saute'/quart pan and add onion, asparagus and 1/2 tsp of salt, on medium heat. Saute' until the onion is translucent & the asparagus is tender.
  2. Add garlic and saute' until it becomes aromatic.
  3. Add can of diced tomatoes (including water), basil, oregano, pepper and remaining sea salt.
  4. Add shrimp and bring to a boil. Let it cook for about 5 mins.
  5. Meanwhile, remove the can of coconut milk from the refrigerator. If the coconut milk is not solid at all, no worries. Just make sure you stir/blend it well. If it is, simply scoop out the entire solid portion off the top.
  6. Remove pan from heat and add coconut cream. Stir until cream is completely blended.
  7. Let simmer for another 3-5 minutes, to allow flavors to meld.
Notes
  1. You can add spaghetti squash or zucchini noodles if desired or even Gluten Free Noodles
  2. Serve immediately and enjoy!!
